Eating to live and living to eat


I absolutely love food. GOOD food. Pouring over recipes, cooking something new, jotting down what I eat, studying different countries' food cultures, and reading memoirs about food and the act of eating are everyday behaviors for me. Coupled with my love of food is a passion for health and wellness. I hope to use this blog to show that it is possible to lead a healthy, balanced, and generally happy life as an overly involved, high-strung, dessert-loving, fairly run-of-the-mill college student.

I agree wholeheartedly. Today I listened to Death Cab for a solid hour on the treadmill with no other distractions. The TV was off and I left my magazines in my bag because it would have been shameful not to just listen. Turned out being the best run I’ve had in a long long time.

You’re Probably Not Eating Enough: Sweet Potato
Well, if you’re anything like me, you ARE eating enough sweet potato (as in, at least once or twice a week).
Why is this root vegetable so praise-worthy? To name just a few reasons, one baked sweet potato with skin:

contains 262% of your recommended daily amount of vitamin A.
contains almost 30% of your recommended daily amount of vitamin C.
…15% fiber and vitamin B6.
…about 10% potassium and iron.
has about 100 calories.
is so versatile and delicious!

Really, you can pretty much make a sweet potato into anything, savory or sweet. A few ideas (v = vegetarian, vv = vegan)

 Black Bean Chili-Topped Baked Sweet Potatoes (vv)
 Sweet Potato Risotto (v)
 Fall Harvest Baked Sweet Potato (v)
 Sweet Potato and Quinoa Salad (vv)
 Sweet Potato Chips (vv)
 Root Vegetable Frittata (v)
 Sweet Potato Fries (obviously had to include this one) (vv)
 Spicy Sweet Potato and Coconut Soup (um, swoon!) (can be vv)
Maple-Roasted Chicken with Sweet Potatoes
 Quinoa with Mushrooms, Kale, and Sweet Potatoes (vv)

You get the idea. Ugh, now I wish sweet potatoes were on the menu today! Unfortunately, they’re not. So you’ll just have to make one of these recipes and send me a pic.

Make It: Deep-Dish Parmesan Polenta Pizza with Sun-Dried Tomato and Spinach

Tonight, my sister made the most delicious (gluten-free!) pizza ever from Real Simple. Get the recipe here. Seriously. Go get it now.

We swapped radicchio for spinach (we bought radicchio, but it ended up being rotten inside). The spinach tasted just fine with the other ingredients — but what DOESN’T spinach taste fine with? We also added some hand-cut pepperoni (my big-time meat eater dad joined us for dinner), but you could definitely keep it vegetarian by leaving it off. It would still taste amazing.

We dug in. It was good.

This. Looks. Awesome. I’d probably opt to make it vegetarian or maybe substitute it for Aidell’s chicken sausage
